The comparison everyone gets wrong

Whenever someone asks me whether meal kits are "worth it," I notice they've already framed the question to lose. They line up the per-serving price of a kit against the per-serving price of buying the same ingredients at the store, the kit comes out higher, and they conclude — correctly, on those terms — that it's a rip-off.

But that comparison only holds if the alternative is you actually cooking that meal from scratch, with ingredients you actually use, on a night you actually planned for. And if I'm honest about my own kitchen, that idealized version of me doesn't show up nearly as often as I'd like to believe. The real choice isn't kit versus perfect scratch cooking. It's kit versus whatever you'd really do instead — which, on a tired Tuesday, is often a delivery app and a fridge slowly turning produce into science experiments.

Once you compare the kit to your true alternative, the honest cost comparison includes two things people leave off the spreadsheet: the food you'd have wasted, and the takeout you'd have ordered.

The waste you're already paying for

Here's a number that reframed everything for me: the typical household throws away close to a third of the food it buys. Not because anyone's careless — because of how grocery shopping works. You buy a whole bunch of herbs for two tablespoons. A pound of ground beef for a recipe that needs half. The "I'll definitely use that" vegetables that quietly liquefy in the crisper drawer.

That waste is invisible money. It doesn't show up as a line on your statement that says "thrown out," but you paid full price for every wilted thing in that trash bag. When I started actually noticing it, I realized my grocery bill wasn't the price of what I ate — it was the price of what I ate plus a rotating tax on what I didn't.

Meal kits attack that tax directly. Everything arrives pre-portioned for the exact meal. The recipe needs one carrot, you get one carrot. There's almost nothing left over to forget about, because there's almost nothing left over, period. So when you compare costs, you can't credit groceries with their sticker price — you have to credit them with the sticker price minus the share that ends up in the bin. For a lot of us, that quietly closes a big chunk of the gap.

The takeout night that never happened

Now the bigger one. Think about why people cave to delivery. It's almost never about money. It's decision fatigue — the end-of-day moment where deciding what to eat, confirming you have the ingredients, and cooking it feels like more than you can muster, so the app wins.

A meal kit is engineered for exactly that moment. The decision is already made, the ingredients are already in the fridge, the recipe is right there. The friction that usually pushes you toward a $35-to-$50 delivery order — plus fees, plus tip — mostly evaporates. So a kit night isn't really a more expensive grocery night. It's a takeout night that didn't happen.

That's the line item that flips the whole thing. If a kit dinner costs more than the raw groceries but a fraction of the delivery order it replaced, then on the nights you'd have ordered in, the kit is the cheaper choice by a wide margin. The premium over groceries is real. The savings over your actual behavior can be much, much bigger.

How to run your own honest numbers

Don't take my word for it — and definitely don't take the kit company's. Track yourself for two or three weeks before deciding. Write down every dollar that goes to food: groceries, the kit if you're trialing one, every delivery and drive-through and "just grabbing something." Then look at the wreckage with two questions in mind.

First: how much food did I genuinely throw away? Be a little ruthless here — the half-used jar, the bread heel, the salad that turned. That's your hidden grocery surcharge.

Second: how many times did I order in, and what did each order really cost with fees and tip? Add those up. That's the number a meal kit actually competes with — not the grocery aisle.

When you stack the kit's monthly cost against that combined picture, you get the true comparison. For some people it confirms scratch cooking wins. For others it's a genuine surprise.

When each one actually makes sense

So who should do what? If you already plan meals, shop to a list, use what you buy, and reliably cook on the nights you intend to — congratulations, you're the rare case, and a kit is a luxury you can skip. Scratch cooking is cheaper for you and you have the systems to capture that savings.

But if your fridge regularly stages a slow tragedy in the produce drawer, if delivery is your reflex when you're worn out, or if the planning step is the wall you keep hitting — a kit isn't an indulgence. It's a tool that buys back the decisions you keep losing.

A lot of people land in the middle, and that's smart: a couple of kit nights covering your most takeout-prone evenings, scratch cooking and leftovers handling the rest. You get the kit's anti-takeout, anti-waste benefit exactly where you need it, without paying the premium on every single meal.

Two cautions, though, and they're the easy money. Pause the box when you'll be away — a charge for food you can't eat is the one outcome that ruins the math instantly. And re-run your numbers every couple of months, because behavior drifts. The kit is only worth the premium for as long as it's actually replacing the more expensive thing you'd otherwise do.
